Bocconcini Salad
One of the most popular shapes for mozzarella is bite-sized bocconcini, little mouthfuls. Toss with fresh seasonal vegetables and greens for a light and refreshing Italian mozzarella salad.

pound mozzarella bocconcini, split into quarters or halves

cherry tomatoes, split in halves

cup green bell pepper, cubed

cup sliced celery

cup Belgian endive, sliced

arugula sprigs

fresh lemon juice

salt and freshly ground black pepper to taste

extra-virgin olive oil
In a large salad bowl, combine the mozzarella, tomatoes, pepper, celery, endive and arugula. Squeeze fresh lemon juice over, season to taste, drizzle with olive oil, toss
